Yeah I would definitely be going through insurance for that one mate.
I had a much smaller ding with a wooden post (with leaves) a while back and the out-of-pocket cost would have been around 3.5-4K.

The trick is to remove the tape after each coat while the plasti-dip is still wet and re-apply new tape (in the exact same location) for the next coat. I probably wouldn't have painted and fitted the damaged unit if I was unhappy with it; but it's good that you took photos prior to any work on it.

Not my area of expertise, but I take it you've checked/replaced your injectors?
Damged/faulty injectors could cause leaning out in one cylinder; even if you've logged your AFR, it wouldn't indicate a problem..
